Oh, the joys of relearning how to cook! My simple, delicious, tried and true dinners are all out the window. Gone are the days of throwing together a quick, warm 30 minute meal. My 20 years of marriage had me settled into a comfortable food rut. Nobody complained.
Now, my kitchen is reordered, restocked, and renewed. My old recipe books sit on a shelf, forgotten. Pinterest is my new best friend.
I’m going to share with you my most favorite dinner right now. It’s a lifesaver. 3 out of 4 of us likes it. My son tolerates it. I call that a win!

Quinoa taco meat (I made mine oil free by baking on parchment paper)
Zucchini tortillas (I left out the oregano and use 1 Tbsp flax meal mixed with a little warm water in place of the egg.)
Magic Green Sauce (I used water in place of the oil)
Ready in under an hour and soooooo good.
